Ingredients
Method
- Melt 1 tablespoon butter in a small skillet over medium heat. Add diced apples, maple syrup, cinnamon, water, and a pinch of salt. Cover and cook for 5 minutes.
- Uncover and cook for 2 to 3 minutes, stirring occasionally, until the apples are tender and syrupy. Remove from the heat and cover to keep warm.
- Whisk flour, brown sugar, baking powder, baking soda, cinnamon, and salt in a large bowl.
- In another bowl, whisk egg, buttermilk, melted butter, and vanilla. Add the wet ingredients to the dry ingredients and stir just until combined. Fold in the grated apple.
- Heat a lightly greased griddle or skillet over medium-low to medium heat. Pour about ¼ cup batter per pancake onto the pan.
- Cook for 2 to 3 minutes, until bubbles form and the edges begin to set. Flip and cook for 1 to 2 minutes more, until golden and cooked through.
- Serve warm with the maple apples spooned over the pancakes.
Notes
I use a tart apple such as Granny Smith or a sweeter apple such as Honeycrisp. If the pancakes brown too quickly, I lower the heat so the centers have time to cook.
I wait to flip until bubbles form on top and the pancake edges look set.
