Ingredients

  • 6 large eggs
  • 1 cup full-fat cottage cheese 225 g
  • 1/2 cup shredded Gruyère 55 g
  • 1/4 tsp fine sea salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder optional
  • 4 slices bacon cooked and crumbled
  • 1 cup baby spinach 30 g, finely chopped
  • 1/4 cup roasted red peppers 40 g, chopped and patted dry
  • 1 green onion thinly sliced

Method

  1. Prep: Put a 9x13-inch pan with 4 cups of hot water on the lower oven rack and heat the oven to 300°F (150°C). Grease a 12-cup muffin tin.
  2. Blend: Blend the eggs, cottage cheese, Gruyère, salt, pepper, and garlic powder for 30 to 45 seconds until completely smooth.
  3. Fill: Divide the bacon, spinach, and peppers among the cups, pour in the egg mixture until three-quarters full, and top with green onion.
  4. Bake: Bake on the center rack above the water bath for 25 to 30 minutes, until just set (160°F / 71°C in the center).
  5. Rest: Cool 5 minutes, loosen with a thin spatula, and serve.

Notes

  • Don't use paper liners. The eggs stick to them. Grease the pan well or use silicone molds.
  • Dry every mix-in well. Wet spinach or peppers make soggy bottoms.
  • Using a 7-cup silicone egg bite mold? Fill it twice, or bake the extra batter in two greased ramekins.
Kitchen Shortcut: Blend the batter the night before and keep it in a jar in the fridge. In the morning, shake it, pour, and bake.
Pro-Chef Tip: Grab a good wedge of Gruyère instead of pre-shredded cheese. The anti-caking powder on bagged cheese keeps it from melting into that smooth, silky texture.
