Ingredients

Oat Base
  • 2 cups old-fashioned rolled oats 180 g
  • 1/2 cup chopped pecans 55 g
  • 1 tsp baking powder
  • 1 tsp ground cinnamon 1/4 tsp ground ginger
  • 1/2 tsp kosher salt
Custard
  • 1 1/2 cups milk 360 ml
  • 3/4 cup plain Greek yogurt 180 g
  • 2 large eggs
  • 3 tbsp pure maple syrup
  • 2 tbsp melted butter
  • Zest of 1 large orange plus 2 tbsp juice
  • 1 tsp vanilla extract
Fruit
  • 1 1/2 cups fresh or frozen cranberries 150 g, half roughly chopped

Method

  1. Prep: Heat the oven to 375°F (190°C) and grease a 9x9-inch baking dish.
  2. Mix dry: Stir together the oats, pecans, baking powder, cinnamon, ginger, and salt.
  3. Mix wet: Rub the orange zest into the maple syrup, then whisk in the milk, yogurt, eggs, butter, orange juice, and vanilla.
  4. Assemble: Spread the oat mixture in the dish, scatter the cranberries on top, and pour the custard over everything.
  5. Bake: Bake 35 to 40 minutes, until golden and set in the center. Rest 10 minutes before slicing.

Notes

  • Use old-fashioned rolled oats. Quick oats and steel-cut oats don't bake up the same way.
  • Dairy-free: use almond milk, a coconut-based yogurt, and olive oil instead of butter.
  • Frozen cranberries go in straight from the freezer so they don't turn the custard pink.
Kitchen Shortcut: Measure the dry mix into the baking dish the night before and keep the wet ingredients whisked in a jar in the fridge. In the morning, pour, shake, and bake.
Pro-Chef Tip: Toast the pecans in a dry skillet for 3 minutes before chopping. It brings out a deep, buttery flavor that makes the whole dish taste richer.
