Ingredients

6 large fresh eggs
½ cup plain whole-milk Greek yogurt (or smooth cottage cheese)
¼ cup milk (dairy or unsweetened almond)
½ teaspoon fine sea salt
¼ teaspoon freshly cracked black pepper
150 g (5 oz) cold-smoked salmon (lox), chopped into bite-sized ribbons
3 green onions (scallions), finely chopped
2 tablespoons fresh dill, chopped
½ cup shredded Gruyere or Swiss cheese (optional)
2 tablespoons Everything Bagel Seasoning (divided)

Method

Prep: Preheat your oven to 375°F (190°C). Thoroughly grease a 9-inch glass or ceramic pie dish with butter or cooking spray.
Whisk the Base: In a large bowl, aggressively whisk the eggs, Greek yogurt, milk, salt, and pepper until smooth and slightly frothy. Stir in the green onions, fresh dill, and 1 tablespoon of the Everything Bagel seasoning.
Layer: Sprinkle the shredded cheese evenly across the bottom of the greased pie dish. Scatter the chopped smoked salmon ribbons over the cheese.
Pour & Top: Gently pour the egg mixture over the salmon and cheese. Sprinkle the remaining 1 tablespoon of Everything Bagel seasoning evenly across the top.
Bake: Bake on the middle rack for 35 to 40 minutes, until the edges pull away from the dish and the center is set (with barely a jiggle). Let cool for 10 minutes before slicing and serving.

            Notes

            • The Dairy Swap: Whole-milk Greek yogurt keeps the eggs creamy without needing heavy cream. Standard milk works but yields a lighter texture.
            • Prevent a Soggy Quiche: If you add vegetables like spinach or mushrooms, sauté and drain them first to remove excess water.
            • Pan Choice: Glass or ceramic dishes bake most evenly. If using dark metal, check 5 minutes early so the edges don't turn rubbery.
