Ingredients

  • 2 large English cucumbers
  • 1 pinch fine sea salt for purging
  • 150 g plain whole-milk Greek yogurt chilled
  • 1 teaspoon fresh ginger root finely grated
  • 1 teaspoon coconut aminos or low-sodium tamari
  • ½ teaspoon pure toasted sesame oil
  • ½ teaspoon fresh lemon juice
  • 200 g high-quality cold-smoked salmon lox, sliced into thin ribbons
  • 1 tablespoon fresh dill finely chopped
  • 1 tablespoon toasted white sesame seeds
  • Flaky sea salt for garnish

Method

  1. Prep the cucumber base: Slice the English cucumbers into even, ½-inch thick rounds. Lay them flat on a paper towel, lightly dust with a pinch of fine sea salt, and let rest for 5 minutes. Gently blot the tops completely dry with a second paper towel to remove excess moisture.
  2. Whip the yogurt: In a small mixing bowl, aggressively whisk the chilled Greek yogurt, grated ginger, coconut aminos, toasted sesame oil, and lemon juice for 60 seconds until light, aerated, and smooth.
  3. Pipe the filling: Transfer the whipped yogurt to a piping bag fitted with a star tip (or use a small spoon). Pipe a generous dollop (about 1 teaspoon) onto the center of each dried cucumber round.
  4. Layer the salmon: Take a small ribbon of the cold-smoked salmon, fold it gently into a rosette shape, and press it lightly into the whipped yogurt on each cucumber slice.
  5. Garnish and serve: Arrange the bites on a chilled serving platter. Garnish each piece with toasted sesame seeds, a tiny sprig of fresh dill, and a single flake of sea salt. Serve immediately.

Notes

  • Always use English cucumbers; they have thinner skins and fewer seeds, preventing a watery, soggy appetizer.
  • Whip the yogurt and slice the cucumber up to two hours ahead of time, but do not assemble until just before serving.
  • For a dairy-free option, substitute the Greek yogurt with blended cashew cream or mashed avocado.
Chilling your serving platter or slate board in the refrigerator for 20 minutes before plating keeps the cucumber crisp and the seafood safely cooled during your party.
